Apple iPhone 1.1.2 Update: will hackers always beat updates?

Some people have even said that they had the iPhone 1.1.2 update before it was officially released.
Apple should be concerned over this and I wonder if hackers will also be able to hack any update, although I do not know much about hacking and how they do it what I do think is how amazing it is that big multimillion dollar corporations like Apple cannot protect their software.
I must be missing something here, what do you think? Will hackers always be able to beat the updates?
I am guessing yes.
