How To: Make A Pumpkin Jack O’ Lantern Cake

If you’re throwing a Halloween party for your children, you will probably be wondering what cake to serve. If a shop-bought cake won’t cut it then why not make this amazing Pumpkin Cake? The children will be sure to love it and the moms will be astounded by your creativity.
The cake is make from two bunt cakes and serves 24. The instructions follow.
To make the cake you will need:
- 5 ½ cups of all-purpose flour
- 4 tsp. ground cinnamon
- 1 tsp. ground ginger
- ½ tsp. ground cloves
- ¼ tsp. ground nutmeg
- 4 tsp. baking powder
- 1 tsp. salt
- 1 ¼ cups of milk (room temperature)
- 1 can (15oz) pumpkin
- 1 tbsp. vanilla extract
- 1 cup butter or margarine (room temperature)
- ½ cup of vegetable oil
- 2 ¼ cups of sugar
- 6 large eggs
- 16 oz cream cheese (room temperature)
- 1 tbsp. vanilla extract
- 9 cups of icing sugar
- Green food-colouring paste
- Orange food-colouring paste
- One flat-bottomed green ice cream cone
- 6 large yellow and 6 large white gumdrops
- Sugar (to roll gumdrops on)
- 2 tbsp. chocolate chips
- Clear edible cake glitter
For The Frosting:
Instructions
1. Preheat the oven to 350° and grease two 10-inch bundt cake pans.
2. In a large bowl, stir together the ‘dry’ ingredients - flour, spices, baking powder, baking soda and salt.
3.In a separate bowl, add the milk, pumpkin and vanilla extract and stir together until smooth.
4.In another large bowl, beat the butter or margarine and oil together with an electric mixer until combined. Beat in the sugar, then the eggs one at a time. Make sure you mix well after each addition.
5. Combine all ingredients and beat until smooth.
7. Divide the batter between the two pans you greased earlier. Bake for 50 to 60 minutes or until a toothpick inserted into the center of the cakes comes out clean.
8. Cool the cakes in the pans for 15 minutes, then turn them out onto wire racks to cool completely.
9.Directions for Frosting:
In a bowl, beat the cream cheese until smooth, mix in the vanilla extract. Gradually add the icing sugar until the frosting is a spread able consistency. Colour one cup of frosting green and the rest color orange.
10.Assembling the Cake:
Trim the bottoms of the cakes so they can lie flat against each other. Frost the flat surface of the bottom cake and place the other cake on top. Then, frost the entire cake orange. Once the frosting has dried, add green frosting leaves and top with the ice cream cone to create a stem.
11.Decorating the Cake:
Sprinkle some sugar over your worktop and use a rolling pin to flatten the yellow and white gumdrops together, making a pancake about ¼ inch thick. Use a knife to cut out the eyes, nose and mouth. Melt 2 tablespoons of chocolate chips in the microwave for around 60 seconds. Dip the left side and bottom of the facial features into the chocolate. Dab a small amount of water to the top surface of each feature. Sprinkle the edible glitter on top, then press the facial features onto the cake,
